Sweet Carrots

5 carrots, peeled and sliced (about 1 lb)

5 Tbsp oil

2 Tbsp agave

tsp kosher salt

1 Tbsp honey

Caramelization helps sweeten and deepen the flavor of the carrots, which is then highlighted by the addition of honey.


  1. Place carrots, oil, agave, and salt in a 3-quart saucepan set over low heat. Cook, stirring, for 30 minutes.
  2. Add honey and continue cooking uncovered for additional 5 to 10 minutes.
  3. Freezes very well for up to 6 months.

The humble carrot is one of the most nutritious root vegetables. It is the richest source of beta-carotene, which in fact is what gives it its dark orange color. Beta-carotene is a fat-soluble compound. This means that eating carrots or the like with a little bit of oil actually makes the carotene more accessible to you. Try using a heart-healthy fat such as olive oil.
